Shape – Flat vs Convex Tamper

The two most common tamper bases are either flat or convex.  As the name suggests:

  • A flat tamper is completely flat on the bottom
  • The base of the convex tamper has a subtly rounded base.

Flat tampers

A flat based tamper is the most common type of coffee tamper.

With a flat tamper, it’s important to ensure the entire base comes in contact with the coffee grounds evenly.  You need to be careful to press directly down and not to favour one side over the other. If you do, the water will flow through one side, resulting in a poorly extracted shot.

Convex Tampers

Convex tampers are less common in the home tamper market, but popular with baristas and professional coffee houses.

When using a convex base tamper, you press down and slightly rock the tamper side to side. 

This causes the grounds to be pushed down and out to the side a little. This is believed to create a better seal between the grounds and the edge of the portafilter.  This ensures the water won’t easily escape down the sides (channelling) and bypass the grounds.

This is a contentious issue amongst the home brewers community and there is nothing definitive proven.

In terms of flat vs convex tamper – it really is an individual choice as to what you prefer.  Provided you’ve got an excellent and consistent tamping technique, a flat base is considered best to ensure a flat and even distribution.

Most tampers resemble an old fashioned rubber stamp, with the handle generally made from either metal or wood. 

The shape of the handles can differ in shape, with some being longer than others, or some with a more rounded top, while others have a flatter top.
